Chicken Bhurji

This chicken bhurji uses cooked chicken breast with quick-cooked vegetables for a fast, high-protein meal.

Ingredients

  • Chicken breast (cooked, skinless), 250 g, shredded
  • Green pepper, 40 g, chopped
  • Tomato, 40 g, chopped
  • Peas, 85 g (cooked)
  • Black pepper (ground), 1/8 tsp
  • Salt (table), 1/8 tsp
  • Coriander leaves, for garnish

1. Cook the vegetables

  • Add green pepper and tomato to a hot pan with a small splash of water.
  • Cook for 2-3 minutes until the tomato softens and the pepper turns tender-crisp.

2. Finish the bhurji

  • Add the peas and shredded chicken. Toss to combine.
  • Season with black pepper and salt, and cook for 2-3 minutes so everything warms through.
  • Garnish with coriander leaves and serve hot.

Chef's Notes

  • If the chicken is dry, add a splash of water while mixing to keep it moist.
  • This works well with rotis or as a protein side with rice.
